Our Story

Chef Mark graduated from the Culinary Institute of America in New York (way back in 1995), before gravitating to Winter Park, Colorado where he met his wife, Angie. With over twenty-five years of experience in the food industry, including working as an executive chef in one of Boulder’s top fine-dining restaurants, Mark brings wisdom and finesse to the table (literally).

Always ready for something new, they (along with their three kids and German Short-haired Pointer) moved to Arizona in 2019, opening up the Firefly food truck at the brink of the lock-downs in 2020. Struggling toward success, they had the opportunity to open up a pizzeria back in their old stomping grounds of Grand County, Colorado, in the summer of 2022. They now spend their time between two states, making quality pizza from the best ingredients available.

The Family

Our Neapolitan pizzas are born from the deep roots of the Italian Amalfi Coast. Mark’s great-grandfather, Gennaro Consiglio, was born in Amalfi, and his great-grandmother, Catherina Savo, was born in Atrani. They immigrated to New Haven, Connecticut, at the turn of the 20th Century, where other branches of the Consiglio family made their way with pizza at the helm  - Sally’s Apizza and Frank Pepe Pizzeri. (Check out this documentary,  Pizza A Love Story that tells all about it!) We've recently been fortunate enough to connect with the family back in Italy, bringing back the authentic-flavor of the region!
